Hi - I am currently working on a design in which weight is crucial, and I was wondering if anyone could tell me the weight of the SOS Leak Sensor and probes.

“Not much” is my provisional answer. I’ve asked internally to see if someone can weigh an individual one that’s not yet attached to an ROV, otherwise I’ll see if I can take off mine and weigh it for you in the next couple of days.
If you want you can make an estimate for the sensor based on the PCB size and number and type of connectors. The probes themselves are basically a small piece of foam with some wires in it, so you could estimate that mass by your desired probe length and a common mass per length value for 28 AWG wire
Following up on this, my kitchen scale isn’t super precise, but I ended up with the following (rough) measurements:
