Is it possible to record the ping 360 sonar? I would like to replay the datas to make some mesurements.

They sure can be replayed! Its a great feature the BR team has developed. Check out the instructions here: User Files - Ping Viewer (bluerobotics.com)
Sensor Logs
The sensor log files (.bin) contain all of the raw binary communications received from the device. These binary communications are in Ping Protocol format. The logs can be replayed by Ping Viewer application. To know more about the binary structure, please check binary log file structure.
