We’re using (3) of the BR-100087 in our university grant project, but I can’t find documentation anywhere on your website that details if it is possible to change the i2c address of these sensors.
Can I? And, if so, how.

It is not possible to adjust the I2C address of the Bar30 or Celsius sensor - you’ll need to use a multiplexer or multiple I2C busses to get connected!
The part number you give is for a I2C level converter -this doesn’t have an address, but just lets higher voltage devices like an Arduino talk 3.3V I2C…
