I know that when using the newer Fathom X electronics the video image is displayed on the computer monitor but is there an easy way get an external HD video signal out to display on an external monitor and be recorded using an external digital video recorder? Am I also right in understanding that its possible to run the older SD camera alongside the newer HD one?

The Fathom X communicates via Ethernet, so you will need to connect it to a computer with an ethernet port and an hdmi output if you want to use an external display. You may also record the video directly to the computer without and external recorder.
Yes, the SD camera will operate independently of the HD camera. It is an analog camera that would use its own separate conductors in the tether.
