I’m clueless at this stuff but I’m trying to add a single T200 to my kayak rudder

T200 to hobbie wing
QUICRUN WP 880 Dual Brushed ESC.
But the T200 has 3 wires, what is the 3rd one for or do it need the basic esc then attach the wp 880 .

A T200 needs a brushless motor ESC, not a brushed motor ESC! It is a 3 phase motor, hence the 3 wires. You can’t connect this type of motor straight to a battery, it would be damaged!
You can use the Basic ESC from Blue Robotics, or any ESC, but you may want one that supports bidirectional operation. This ESC is connected to power, and then you’ll need a source for a servo-style PWM control signal - like the Thruster Commander. Checkout the guides on that product page for information on how to wire it up!
