Is there a maximum depth/pressure rating for the TSYS01 temperature sensor? There doesn’t seem to be one listed on the datasheet.

The TSYS01 is a sensor chip, which for underwater use is enclosed in a casing so that it doesn’t experience significant pressure (or get wet). For our Celsius sensor package (which uses the TSYS01), the operating depth (0-975m) is specified in the Technical Details on the product page.
