Definitions of “burst” can vary substantially, so it’s a difficult rating to provide in a meaningful capacity (not to mention the variable impact of the operating conditions).
This comment covers the main reasoning behind how we’ve sized power cables - in short “use the biggest thing we can fit through a penetrator, and assume standard ROV usage won’t overload it”. Worth noting that cable ratings are generally not made for use in water, which can cool the cables much more effectively than when they’re in air.
Overheating the battery, cables, and/or ESCs can all be problematic. In the worst case things can melt and/or burn, resulting in permanent damage to those components, and possibly also some of the components around them.
