An update for everyone -
VLC proves tricky to transcode and get the subtitles in, at least on newer versions on Mac. I’ve had good success by using handrbrake - useful to convert .mkv to .mp4 anyways, but if you go to subtitles tab, right click and add external track, and then check burned in, you’ll be set to go!
